Beech 

Beech mushrooms are mild and nutty, with a slightly sweet, buttery, and crunchy texture that is robust and holds up well when cooked. Excellent in stir-fries adding texture, soups and light pasta dishes. 

Maitake

Maitake Mushrooms are rich, earthy and peppery with a strong umami flavor. Firm and slightly chewy becoming tender when cooked but retaining a great bite. Awesome in soups, and savory dishes.

Shiitake

Shiitake Mushrooms offer a rich, earthy and deep savory flavor with slight smoky undertones. Retaining texture even after cooking these mushrooms a meaty bite to any dish. Renowned for creating umami in broths and soups. 

Chestnut

Chestnut mushrooms with caps resembling chustnuts are umami-rich and earthy with nutty like flavor. Becoming softer when cooked, but maintaining a firm structure and slight crunch. Holds up well in soups and stews and provides a great bite.

Enoki

Enoki Mushrooms are thin mild, slightly fruity and offer delicate sweetness. Unique is size and shape these are crisp and tender raw, but still retain some crunch when cooked. Great additions to soups and with salads.

Pioppino     

Pioppino mushrooms often used in italian dishes offer hearty, depth of flavor with earthy, peppery and nutty notes. Stems remain slightly chewy when cooked, with caps becoming more tender. Add to your next pasta or risotto dish.
